| Dr Martin Cole |

Dr Martin Cole commenced as Chief of CSIRO Food and Nutritional Sciences(CFNS) in January 2010. He is esponsible for leading the CSIRO Food and Nutritional Sciences research portfolio and developing CSIRO's research capability in food and nutrition science. Over the last 5 years he was the Director of the US National Centre for Food Safety and Technology (NCFST) and Research Professor of Biology at Illinois Institute of Technology (IIT), Chicago, Illinois. From 1999 to 2004, Dr Cole was based at Food Science Australia (FSA) ¨C a joint venture between CSIRO and the Victorian Government and the predecessor to CFNS. His time at FSA included 15 months as acting CEO. Born in the United Kingdom, Dr Cole graduated with a Bachelor of Science from the Manchester Metropolitan University and completed a PhD at the University of East Anglia in 1988. His career has
included research and management appointments with food companies Unilever and Nabisco. With many years of experience in food policy and the development of international food safety standards, Dr Cole has frequently been called upon as an expert by organisations such the World Health Organization (WHO), the Food and Agriculture Organization (FAO) as well as the US House of Representatives. He has received numerous awards including election as a fellow of the International Academy of Food Science & Technology and currently chairs the International Commission on the Microbiological Specifications for Food. Dr Cole has published and presented over 150 papers on many aspects of food science including food safety, food trends and innovation, novel processing and nutrition.

Xiumei Liu£¬Vice President of the Chinese Institute of Food Science and Technology. Professor, National Institute of Nutrition and Food safety, China CDC. She has the long-term experiences in the studies on Foodborne Diseases, Food Microbial Criteria and Microbiological Risk Assessment. She has taken charge of the National Surveillance Network for Foodborne Diseases and Foodbone Pathogens, chaired the Committee of Food Microbiological Standardization, Ministry of Health, and established or revised the National Food Microbiological Methods and Microbial Criteria in Foods. As a major delegate of China, she has valuably attended the last 10 sessions of CCFH, and been appointed as the Head of Delegation of China in 5 sessions from 1999 to 2009. She is currently serves as the Secretariat in General, Codex Committee on Food Additives (CCFA). She also services as the member of National Review Committee on Food Safety Standards, the member of the National Consultation Committee on Food Safety Risk Assessment. Dr. Liu is very active in Codex and food safety relative activities of WHO. She serves as a Member of WHO's Foodborne Disease Burden Epidemiology Reference Group (FERG), Member of International Commission on Microbiological Specifications on Foods (ICMSF) and the Chair of the Northeast Asian & China Sub-commission, Director on the Board of AOAC INTERNATIONAL, Fellow of International Academy of Food Science and Technology (IAFoST), and the Co-Chairs of Food Safety Expert Panel, International Union of Food Science and Technology (IUFoST).

Lucia Anelich has a PhD in Microbiology and is Sole Proprietor of Anelich Consulting, her own business, which she started in January 2011. In 2006, she was asked by an industry association, the Consumer Goods Council of South Africa to establish a food safety body for the South African food industry i.e. The Food Safety Initiative-a first for the country. She headed up the Food Safety Initiative until December 2010. Prior to this, she was with Tshwane University of Technology (Pretoria, South Africa) for a period of 25 years, during which she was Professor in microbiology and Head of the Department Biotechnology and Food Technology, in the latter 10 years. Here, she received numerous awards from TUT, including Lecturer of the Year Award and the prestigious Vice-Chancellor¡¯s Award for outstanding achievement (awarded only once in the career of an individual). Lucia¡¯s areas of expertise include food microbiology, foodborne pathogens, food safety, food safety management systems and private food safety standards. She works with FAO/WHO and Codex on food safety, HACCP, risk management and private food safety standards and continues to conduct a number of projects for these organizations in these fields. Lucia is involved with the following organizations: Officer of the International Commission on the Microbiological Specification for Foods (ICMSF); Past Governing Council member (two terms) of the International Union of Food Science and Technology (IUFoST) till August 2010; Inaugurated as a Fellow to the International Academy of Food Science and Technology (IAFoST) in August 2010; Immediate Past Vice-President of the SA Association for Food Science and Technology (SAAFoST-till August 2010); Member of Global Food Safety Initiative¡¯s (GFSI) Technical Committee and appointed to newly formed Advisory Council of GFSI in 2010; Serves on South African Bureau of Standards (SABS) Technical Committees for food hygiene, food safety, microbiological methods; Serves on the South African National Accreditation System (SANAS) Advisory Board and Standing Technical Committee for Certification; Conducts technical assessments for SANAS on SANS 10330 (HACCP), ISO 22000, ISO 17021 and ISO 17020; Trains in and speaks on food safety, foodborne pathogens, risk assessment and risk management topics; Published scientific and popular articles, and has contributed to a number of books; Serves on Editorial Board of the journal ¡°Food Control¡±; Serves on Editorial Advisory Board of a new publication destined for 2012 i.e. the Encyclopedia of Food Safety and writing chapter for this publication; Registered as a Professional Natural Scientist with South African Council for Natural Scientific Professions (SACNASP). |

| Dr. Katherine M.J. Swanson |

Dr. Katherine M.J. Swanson£¬At Ecolab, she identifies new control strategies for emerging food safety concerns and assists customers with high level food safety issues. Prior to joining Ecolab in 2004, she had extensive food safety experience at General Mills and Pillsbury in developing microbiological and food allergen controls, Hazard Analysis Critical Control Point (HACCP) and product quality management systems, specification systems and food quality audits. She also developed applications for innovative food microbiological test methods at 3M Company and was an Assistant Professor of Food Microbiology at Cornell University. Dr. Swanson is currently Vice President of the International Association for Food Protection (IAFP), the worlds largest professional society dedicated to advancing food safety world wide. At the same time, Dr. Swanson is a member of the International Commission on Microbiological Specifications for Foods and a Fellow of the Institute of Food Technologists. She has also served on the U.S.National Advisory Committee on Microbiological Criteria for Foods, the U.S. Food and Drug Administration¡¯s Science Advisory Board, U.S. National Academies of Science committees and the Conference for Food Protection¡¯s Council. Dr.Swanson received her Bachelor of Science degree in Dietetics from the University of Delaware, and her Master of Science and Ph.D. in Food Science from the University of Minnesota. She has received numerous awards and recognitions,including the 2003 NFPA Food Safety Award and the 2008 National Center for Food Safety & Technology Food Safety Award.

| Dr Tom Ross |

Dr Tom Ross is currently Professor in Food Microbiology at the University of Tasmania's Food Safety Centre, Tasmania, Australia. Dr Ross started research work in the early 1990¡¯s on mathematical modelling of the microbial ecology of foods.The results of his team¡¯s studies are used to improve the safety and shelf life of
foods. Some have been adopted into Australian food regulations and integrated into commercial computer programs for use by industry. Latterly, those techniques have been integrated into the development of microbial food safety risk assessments for government and industry, both within Australia and overseas. These studies also motivate new laboratory-based research projects to better characterise risks of infections and intoxications from foods. Dr Ross has published about 100 scientific papers and book chapters. He has served on both Australian and international expert committees concerned with food safety, and currently collaborates in national and international food safety research projects.

Peter K. Ben Embarek is currently working with the World Health Organization (WHO) China office in providing policy and technical advice to the government of China on food safety and nutrition issues. Previously from WHO¡¯s Headquarters,he worked in lending support to Member States on how to develop and strengthen integrated and multisectoral national food safety strategies and policies. He joined WHO at its HQ in Geneva, Switzerland in 2001 where he was responsible for the microbiological aspects of food safety matters in the work of the Organization including the development of microbiological risk assessment work at the international level. He is covering food safety issues as part of the WHO assessment and response efforts to new emerging public health issues such as SARS and Avian Influenza. Dr. Ben Embarek served with the Food and Agriculture Organization of
the United Nations (FAO) beginning in 1995 where he coordinated research and development activities and provided technical advice on safety and quality aspects of fishery products at the regional office for Asia and the Pacific in Bangkok,Thailand. In 1997, he joined the Fisheries Department of FAO HQ in Rome, Italy where he covered food safety aspects of the work of the Department. Dr. Ben Embarek received his MSc. Degree in Food Science and Technology and a Ph.D. in Food Safety from the Royal Agricultural and Veterinary University of Copenhagen,Denmark.
